Bring a large pot of salted water to a boil. Add the Trader Joe's Pappardelle Pasta and cook according to package directions until al dente, about 8-10 minutes. Reserve 1 cup of the pasta cooking water before draining.

While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes and cook for 1 minute until fragrant. Be careful not to burn the garlic.

Add the trimmed and cut asparagus to the skillet and sauté for 5-7 minutes, until tender-crisp. Remove from heat.

In a medium bowl, combine the ricotta cheese, lemon zest, lemon juice, 1/2 cup grated Parmesan cheese, salt, and black pepper. Stir until well combined.

Add the drained pasta and the sautéed asparagus to the skillet with the garlic and red pepper flakes. Pour the ricotta mixture over the pasta and asparagus.

Gradually add the reserved pasta cooking water, 1/4 cup at a time, stirring constantly, until the sauce reaches your desired consistency and coats the pasta beautifully. You may not need all of the water.

Serve immediately, garnished with additional grated Parmesan cheese and a squeeze of fresh lemon juice, if desired.
