Place the thin-sliced top sirloin in a shallow dish or resealable bag. Season both sides of the steak generously with salt and garlic powder.

Add the thinly sliced yellow onion to the dish with the steak. Pour enough Goya Mojo Marinade over the steak and onions to coat everything well, ensuring the onions are submerged with the steak. Mix gently to combine. Marinate for at least 30 minutes at room temperature, or up to 4 hours in the refrigerator.

Heat a large skillet or griddle over high heat. Add 1 tablespoon of vegetable oil. Once the oil is shimmering, add the marinated steak and onions to the pan in a single layer, along with a splash (about 2 tablespoons) of the remaining marinade.

Slice each Cuban bread loaf lengthwise, without cutting all the way through, to create a pocket. Spread a generous amount of mayonnaise on the inside of both halves of each bread loaf.

Evenly distribute the cooked steak and onions among the four bread loaves. Top the steak and onions with a generous handful of papitas (potato sticks) on each sandwich.

Butter the outside of each sandwich loaf. Place the buttered sandwiches in the same skillet or on a clean griddle over medium heat. Toast the sandwiches, pressing down gently with a spatula, until golden brown and crispy on both sides, about 2-3 minutes per side.
