Cook the sweet potato until it is fully tender and can be easily pierced with a fork. This can be done by microwaving for 5-10 minutes (depending on size) or baking at 200°C (400°F) for 30-45 minutes.

Once cooked, mash the sweet potato thoroughly in a bowl until smooth. Add the chopped dark chocolate squares to the warm mashed sweet potato and stir until the chocolate is completely melted and fully combined with the sweet potato.

Line a small container or dish (e.g., a small loaf pan or an 8x8 cm (3x3 inch) container) with parchment paper. Transfer the sweet potato and chocolate mixture into the lined container and smooth out the top evenly with a spatula.

Melt the 40g of no sugar added dark chocolate chips. This can be done in a microwave in 30-second intervals, stirring in between, or over a double boiler. Once melted, spread this chocolate evenly over the top of the sweet potato mixture in the container.

Place the container in the refrigerator and chill for at least 1 hour, or until the fudge is fully cooled and the top chocolate layer has hardened completely.

Once chilled and firm, remove the fudge from the container using the parchment paper. Slice into desired serving sizes, serve, and enjoy!
