Crumble the feta cheese into the bowl of a food processor. Add the 1/4 cup extra virgin olive oil, lemon juice, lemon zest, minced garlic, chopped fresh dill, chopped fresh parsley, chopped fresh mint, and 1/4 teaspoon black pepper.

Process the mixture on high speed until it becomes smooth and creamy, scraping down the sides of the bowl as needed. If the mixture is too thick, add cold water 1 tablespoon at a time until the desired whipped consistency is reached.

Taste the whipped feta and adjust seasoning with salt and additional lemon juice if desired. Keep in mind that feta cheese is naturally salty, so add salt sparingly.

Transfer the whipped feta to a serving bowl. Drizzle with 1 tablespoon of extra virgin olive oil and sprinkle with red pepper flakes and a few extra fresh herbs for garnish.
