Preheat your oven to 180°C.

Line a muffin tray with muffin liners.

In a large bowl, combine all the dry ingredients: 250 grams plain flour, 25 grams cocoa powder, 10 grams baking powder, 1/2 teaspoon bicarb soda, and 150 grams caster sugar. Mix these dry ingredients well.

In a separate bowl, combine all the wet ingredients: 1 egg, 125 grams milk, 100 grams melted butter, and 1 teaspoon vanilla extract. Whisk these wet ingredients until they are well combined.

Pour the wet ingredients mixture into the bowl containing the dry ingredients.

Fold the mixture gently until just combined. Be careful not to overmix.

Add 100 grams milk chocolate chips, 50 grams dark chocolate chips, and 50 grams white chocolate chips to the batter.

Fold the chocolate chips gently into the batter until they are just combined.

Distribute the muffin batter evenly among the prepared muffin liners in the tray.

Bake in the preheated oven at 180°C for 20-25 minutes, or until a skewer inserted into the center of a muffin comes out clean.
