In a large mixing bowl, combine the honey, freshly squeezed orange juice, finely grated orange zest, vanilla extract, ground cinnamon, and salt. Whisk these ingredients together until they are well combined and form a smooth glaze.

Add the washed and destemmed red seedless grapes to the bowl with the glaze mixture. Gently toss the grapes until they are evenly coated with the honey-orange glaze.

Spread the glazed grapes in a single layer onto the prepared baking sheet. Ensure they are not overcrowded, as this will help them roast evenly and caramelize nicely.

Roast the grapes in the preheated oven for 15 to 20 minutes. Halfway through the roasting time, gently stir the grapes to ensure even cooking and caramelization. The grapes should be slightly softened, and the glaze should have thickened and caramelized slightly.

Remove the baking sheet from the oven and let the glazed grapes cool slightly on the sheet. The glaze will continue to thicken as it cools.
