Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or aluminum foil.

Prepare the lobster tails. Using kitchen shears, cut down the center of the top shell of each lobster tail, from the wide end to the base of the tail, being careful not to cut through the meat. Gently pry open the shell and carefully lift the lobster meat out, leaving it attached at the base of the tail. Place the meat on top of the shell. Cut the lobster meat crosswise into 1-inch bite-sized pieces.

In a small bowl, combine the melted unsalted butter, minced garlic, chopped fresh parsley, chopped fresh chives, lemon juice, paprika, salt, and black pepper. Whisk well to combine.

Arrange the prepared lobster tails on the lined baking sheet. Spoon about half of the butter-herb mixture evenly over the lobster pieces.

Bake for 8-10 minutes, or until the lobster meat is opaque and cooked through. Be careful not to overcook, as lobster can become tough.

Remove the lobster from the oven. Drizzle the remaining butter-herb mixture over the cooked lobster bites. Garnish with additional fresh parsley and serve immediately with lemon wedges.
