To prepare the Peach Cobbler Syrup, combine the diced peaches, light brown sugar, 2 cups of water, cinnamon, nutmeg, and salt in a medium saucepan.

Bring the mixture to a gentle simmer over medium heat, stirring occasionally.

Continue to simmer for 15 to 20 minutes, stirring occasionally, until the peaches are very soft and the sugar has completely dissolved.

Remove the saucepan from the heat and stir in the vanilla extract.

Using an immersion blender, blend the mixture directly in the saucepan until it is completely smooth. Alternatively, carefully transfer the mixture to a standard blender and blend until smooth. Be cautious when blending hot liquids.

Allow the peach cobbler syrup to cool completely to room temperature. This will take at least 1 hour.

Once the syrup is cooled, prepare the lemonade. In a large pitcher, combine the cooled Peach Cobbler Syrup and the freshly squeezed lemon juice.

Add the 4 cups of cold water to the pitcher and stir well to combine all ingredients.

Fill the pitcher with 4 to 6 cups of ice and stir again until the lemonade is well chilled.

Garnish individual servings or the pitcher with fresh peach slices, lemon slices, and a sprig of mint. If desired, add Crown Royal Peach to taste for an adult version.
