In a medium bowl, add the raspberries. Using a fork, mash the raspberries until they are mostly broken down but still have some texture.

Add the chia seeds and lemon juice to the mashed raspberries. If desired, add the maple syrup or honey for sweetness. Stir all ingredients together thoroughly until well combined. Set aside to allow the chia seeds to absorb liquid and thicken.

Take four serving glasses or jars. Spoon approximately half of the Greek yogurt into the bottom of each glass, creating the first layer.

Carefully spoon half of the raspberry chia mixture over the yogurt layer in each glass. Add the remaining Greek yogurt as the next layer, and then top with the remaining raspberry chia mixture.

Pour the melted dark chocolate evenly over the top layer of the raspberry chia yogurt in each glass. Optionally, sprinkle a pinch of sea salt over the chocolate for enhanced flavor.
