In a medium bowl, whisk together the eggs, salt, and 1/4 teaspoon of black pepper until well combined. Slice the bagels in half.

Heat a large non-stick frying pan over medium heat. Add the butter and swirl to coat the pan. Pour the whisked egg mixture evenly into the pan.

Immediately place the two halves of each bagel, cut-side down, into the cooking egg mixture. Allow the egg to cook for 1 to 2 minutes, letting it seep into the bagel. Using a fork or spatula, carefully flip each bagel half so the other side is also coated in egg and cooks briefly.

Once the egg is mostly set around the bagels, carefully flip the entire egg-bagel assembly over. Continue to cook for another minute until the egg is fully set.

On one half of each egg-covered bagel, spread a generous spoonful of cottage cheese. Layer the sliced avocado on top of the cottage cheese. Season with everything bagel seasoning and the remaining 1/2 teaspoon of black pepper. Add a handful of fresh greens over the toppings.

Using a spatula, carefully fold the other half of the egg-bagel over the fillings to create a sandwich. Transfer the finished breakfast bagels to plates and serve immediately.
