Preheat your oven to 375°F. Line a baking sheet with parchment paper.

In a medium bowl, combine the finely crushed pretzel twists, melted unsalted butter, garlic powder, and smoked paprika. Stir until the pretzels are evenly coated.

In a separate small bowl, whisk together the large egg and water to create an egg wash.

Take each 1-inch cube of smoked Gouda cheese, dip it into the egg wash, allowing any excess to drip off. Then, immediately roll the cheese cube in the pretzel mixture, pressing gently to ensure it's fully coated on all sides.

Place the coated Gouda bites onto the prepared baking sheet, leaving a little space between each one.

Bake for 10 to 12 minutes, or until the cheese is melted and bubbly, and the pretzel coating is golden brown and crispy.
Carefully remove the baking sheet from the oven. Let the bites cool for a few minutes before serving, as the melted cheese will be very hot. Serve warm.
