Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

Heat olive oil in a large skillet over medium-high heat. Add the removed bratwurst casings and break up the meat with a spoon as it cooks. Cook until browned and crumbled, about 8-10 minutes. Drain any excess grease and set aside.

On the prepared baking sheet, spread about half of the tortilla chips in a single layer. Sprinkle with half of the shredded cheddar and Monterey Jack cheeses. Distribute half of the cooked bratwurst, diced red onion, pickled jalapeño slices, and chopped dill pickles over the cheese layer.

Repeat the layering process with the remaining tortilla chips, cheeses, bratwurst, red onion, pickled jalapeños, and chopped dill pickles.

Place the baking sheet in the preheated oven and bake for 8-12 minutes, or until the cheese is melted, bubbly, and slightly golden at the edges of the chips.

Carefully remove the nachos from the oven. Garnish generously with fresh chopped cilantro. Serve immediately with dollops of sour cream and lime wedges on the side. Drizzle with hot sauce, if desired, for an extra kick.
