In a small saucepan, heat the fresh cream over medium heat until it comes to a boil. Watch carefully to prevent scorching.

Once the cream boils, immediately remove it from the heat. Add the chopped white chocolate and instant coffee to the hot cream. Mix well with a whisk or a hand blender until the chocolate is completely melted and the mixture is smooth and uniform.
Pour the ganache into a clean container. Cover the surface of the ganache directly with food film (in contact) to prevent a skin from forming. Refrigerate for at least 6 hours, or preferably overnight, to allow it to chill and firm up.

Once thoroughly chilled, transfer the ganache to a mixing bowl. Using electric whips, beat the ganache until it becomes light, fluffy, and holds soft peaks. It's now ready to be used as a filling for cakes or as an indulgent addition to your coffee.
