Divide the ground beef into 8 equal portions (about 4 ounces each). Form each portion into a large, thick patty, slightly wider than your burger buns. Season both sides of each patty generously with kosher salt and black pepper.

Divide the extracted beef bone marrow into 8 equal portions. Press one portion of bone marrow firmly into the center of one side of each raw beef patty. This will infuse the patties with rich flavor as they cook.

Heat the vegetable oil in a large cast-iron skillet or heavy-bottomed pan over medium-high heat until shimmering. Place 2-3 patties in the hot pan, marrow-side up. Cook for 4-5 minutes until a deep brown crust forms on the bottom.

While the first side cooks, lightly toast the burger buns. You can do this in a separate dry pan, under a broiler, or in a toaster. Set aside.

Flip the patties. The marrow should have melted and begun to integrate into the meat. Cook for another 3-4 minutes for medium-rare, or longer to your desired doneness. Repeat with remaining patties.

For each burger, place one slice of American cheese on the top half of a toasted bun. Using a kitchen torch, carefully melt the cheese until it's gooey and bubbling. Alternatively, you can place the cheesed bun halves under a broiler for 30-60 seconds, watching carefully to prevent burning.

Assemble the burgers: On the bottom half of each toasted bun, layer a generous amount of pickle chips. Place two cooked bone marrow patties on top of the pickles. Drizzle a generous amount of ketchup over the patties.

Add two fresh lettuce leaves and 2-3 slices of tomato on top of the ketchup. Crown with the melted cheese bun top. Serve immediately and enjoy your mega melty monster burger!
