In a medium bowl, combine the sliced flank steak with 2 tablespoons of soy sauce, cornstarch, sesame oil, and black pepper. Mix well to coat the beef. Set aside to marinate while you prepare the other ingredients.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and cook until browned and cooked through, about 3-4 minutes. Remove the beef from the skillet and set aside.

Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the broccoli florets and cook for 3-5 minutes, stirring occasionally, until tender-crisp. Remove the broccoli from the skillet and set aside.

Pour the beaten eggs into the hot skillet. Scramble the eggs until just cooked through, then break them into small pieces. Remove the scrambled eggs from the skillet and set aside.

Add the diced yellow onion to the skillet and cook until softened, about 2-3 minutes. Add the minced garlic and grated ginger and cook for another minute until fragrant.

Add the day-old chilled rice to the skillet. Break up any clumps with your spatula. Stir in 3 tablespoons of soy sauce and the oyster sauce (if using). Cook for 3-5 minutes, stirring frequently, until the rice is heated through and slightly toasted.

Return the cooked beef, broccoli, and scrambled eggs to the skillet with the rice. Stir everything together until well combined and heated through.
