Cook the pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining. Set aside.

While the pasta is cooking, heat olive oil in a large skillet or Dutch oven over medium heat. Add minced garlic and cook for 1 minute, until fragrant, being careful not to burn it.

Stir in the undrained diced tomatoes and vegetable broth. Bring the mixture to a simmer, then reduce heat to low and let it cook for 5-7 minutes, allowing the flavors to meld.

Pour in the heavy cream and stir well. Continue to simmer for another 2-3 minutes, until the sauce slightly thickens.

Add the fresh spinach to the skillet, stirring until it wilts, which should take about 2-3 minutes.

Add the cooked and drained pasta to the sauce. Stir in the grated Parmesan cheese, salt, and black pepper. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.

Serve immediately, garnished with additional grated Parmesan cheese and fresh basil, if desired.
