In a food processor, combine the 1/2 cup of crushed freeze-dried dragon fruit, pitted dates, and salt. Process until the mixture comes together to form a sticky, pliable dough-like consistency. It should be firm enough to hold its shape.

Line a small baking sheet (approximately 8x8 inches) with parchment paper. Press the nougat mixture evenly onto the parchment paper, forming a disc or square about 1/2 inch thick. Sprinkle 1 tablespoon of the remaining crushed freeze-dried dragon fruit evenly over the surface of the nougat. Place the baking sheet in the freezer for at least 1 hour, or until the nougat is firm.

Once firm, remove the nougat from the freezer. Carefully lift it from the parchment paper and place it on a cutting board. Using a sharp knife, cut the nougat disc into approximately 8 to 12 rectangular bars of your desired size.

Prepare your chosen chocolate (dark or white) for melting. You can do this by placing the finely chopped chocolate in a microwave-safe bowl and heating in 30-second intervals, stirring after each, until smooth. Alternatively, use a double boiler over simmering water, stirring until fully melted and smooth.

Dip each nougat bar into the melted chocolate, ensuring it is fully coated. Allow any excess chocolate to drip off. Place the coated bars back onto the parchment-lined baking sheet. Immediately sprinkle each bar with a pinch of the remaining crushed freeze-dried dragon fruit and a few flakes of fleur de sel.

Allow the chocolate to set completely at room temperature, or refrigerate for 10-15 minutes to speed up the setting process. Once set, the Dragon Fruit Nougat Bars are ready to serve or store.
