Season the raw lean sirloin steak (900g, or 3 x ~300g steaks) generously with salt and pepper on all sides.

Cook the seasoned steak to your preferred doneness. For medium-rare, sear in a very hot pan for 3-5 minutes per side, depending on thickness.

Remove the cooked steak from the pan and let it rest on a cutting board for at least 5-10 minutes. This allows the juices to redistribute.

While the steak rests, char the 3 ears of fresh corn in a very hot skillet or on a grill until nicely browned and slightly softened. Let the charred corn cool.

Once cool enough to handle, carefully cut the kernels off the cobs.

Preheat your broiler. Remove the tough ribs from the 1 cup of kale and tear the leaves into bite-sized pieces.

Chop the 1 pint of cherry tomatoes, dice the 1 cucumber, finely dice the 1/2 red onion, and dice the 1 avocado.

Finely chop 1 bunch of fresh parsley, 1 bunch of fresh cilantro, and finely dice 1 jalapeño.

Once rested, chop the steak into small, bite-sized pieces, ensuring they are micro-chopped for the salad.

In a large bowl, combine all the prepared salad ingredients: chopped steak, charred corn kernels, chopped cherry tomatoes, diced cucumber, finely diced red onion, diced avocado, finely chopped parsley, finely chopped cilantro, finely diced jalapeño, and crispy kale.

For the Lime Chimichurri Vinaigrette, add all vinaigrette ingredients (30g fresh lime juice, 15g red wine vinegar, 30g extra-virgin olive oil, 8g honey, 5g Dijon mustard, 5g fresh garlic, 10g fresh cilantro, 10g fresh parsley, 1/2 teaspoon dried oregano, salt to taste, and lots of cracked black pepper) to a food processor or blender.

Blend until all ingredients are well combined and the mixture forms a smooth vinaigrette.

Pour the freshly blended Lime Chimichurri Vinaigrette over the assembled salad in the large bowl.

Toss everything together thoroughly to ensure all ingredients are evenly coated with the dressing. Serve immediately and enjoy!
