Preheat your oven to 190°C (170°C for a fan oven). Line a baking sheet with parchment paper.

In a large mixing bowl, pour in the 110g of melted unsalted butter.

Add the light brown sugar (approximately 1/2 cup, packed) and 115g of granulated sugar to the bowl.

Whisk the butter and sugar mixture until it is fully combined and smooth.

Crack in the 1 large egg and add 1 teaspoon of vanilla extract to the mixture.

Whisk again until the egg and vanilla are thoroughly combined with the wet ingredients.

Add the 200g of plain flour, 1/2 teaspoon of bicarbonate of soda, and 1/4 teaspoon of salt to the bowl.

Using a spatula, mix these dry ingredients into the wet mixture until a cohesive dough forms. Be careful not to overmix.

Stir in the chocolate chips (approximately 1 cup) into the dough. Fold them through until they are evenly distributed throughout the mixture.

Scoop out approximately 15g portions of dough. Roll each portion into a small ball using your hands.

Place the dough balls onto the prepared baking sheet, leaving some space between each cookie.

Bake the cookies in the preheated oven for 5-6 minutes, or until the edges are lightly golden and the centers are still soft.
