Cook the spaghetti according to package directions until al dente. Once cooked, drain thoroughly.

While the spaghetti cooks, chop the 2 red onions. You can use a food processor for a finer chop or chop them by hand.

Heat 1 tablespoon of oil in a large pan over medium heat. Add the chopped red onions and sauté until softened and translucent, about 5-7 minutes.

Add the cut bacon to the pan with the onions. Cook, stirring occasionally, until the bacon is crispy and the onions are caramelized and golden brown, about 8-10 minutes.

Remove the cooked bacon and onion mixture from the pan and set it aside in a bowl.

Pour the 500g of white sauce into the same pan (no need to clean it).

Add the 200g of grated Red Leicester cheese to the white sauce in the pan. Stir continuously over medium-low heat until the cheese is fully melted and the sauce is smooth and creamy.

Add the cooked spaghetti, along with the reserved bacon and onion mixture, to the cheese sauce in the pan.

Mix all ingredients thoroughly in the pan until the spaghetti is evenly coated with the creamy sauce and the bacon and onions are well distributed.

Serve the creamy, cheesy pasta hot, topped with extra grated Red Leicester cheese if desired, and enjoy!
