Add the frozen roasted corn to the skillet with the cauliflower. Continue to cook for another 3-5 minutes, stirring occasionally, until the corn is heated through and slightly charred in spots.

While the cauliflower and corn are cooking, prepare the elote dressing. In a small bowl, whisk together the mayonnaise, sour cream, lime juice, crumbled cotija cheese, chili lime seasoning, garlic powder, and chopped cilantro until well combined.

Remove the cauliflower and corn mixture from the heat. Pour the elote dressing over the warm cauliflower and corn. Stir gently to ensure everything is evenly coated.

Taste and adjust seasoning if needed. Serve immediately, garnished with additional crumbled cotija cheese, a sprinkle of chili lime seasoning, and fresh cilantro, as desired.
