In a stainless steel pot, combine the 1 cup of water, 1 cup of granulated sugar, and 1 cup of shredded fresh ginger.

Place the pot on the stove over medium-high heat and bring the mixture to a boil. Once boiling, reduce the heat to low and simmer for 10 minutes, stirring gently with a wooden spoon occasionally.

After 10 minutes, remove the pot from the heat. Add the fresh mint leaves and lemon zest to the hot syrup mixture. Let steep for 5 minutes.

Strain the entire mixture through a fine-mesh sieve into a clean glass bowl, separating the liquid syrup from the ginger, mint, and lemon zest solids. Discard the solids.

Allow the strained ginger syrup to cool completely to room temperature. Once cooled, add the 3 tablespoons of fresh lemon juice to the syrup and whisk well to combine.

To assemble each glass of ginger ale: Fill a serving glass with ice cubes. Add a sprig of fresh mint. Pour approximately 3 tablespoons of the prepared ginger syrup into the glass. Top off the glass with sparkling water or club soda. Gently stir the drink with a spoon and garnish with an additional fresh mint leaf, if desired.
