While the apples are cooking, prepare the cookie dough. In a large mixing bowl, combine the vanilla protein powder, honey, oat flour, old-fashioned oats, and nonfat Greek yogurt. Mix thoroughly until a thick and wet dough forms.

Once the apples are soft, remove them from the heat and let them cool slightly. Then, gently fold the cooked apples into the cookie dough mixture until evenly distributed.

Scoop the dough into 10 equal-sized balls and place them onto the prepared baking sheet, leaving some space between each cookie.
