In a large bowl, whisk together the whole eggs and egg whites until well combined. Season with salt and black pepper.

Heat olive oil in a large non-stick skillet or cast-iron pan over medium heat. Add the chopped turkey bacon and cook until crispy, about 5-7 minutes. Remove bacon from the skillet and set aside, leaving any rendered fat in the pan.

Add the diced onion and bell pepper to the same skillet. Sauté for 5-7 minutes, or until softened.

Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.

Pour the whisked egg mixture into the skillet with the vegetables. Let it cook undisturbed for about 30 seconds to begin setting.

Using a spatula, gently push the cooked egg from the edges towards the center, tilting the pan to allow uncooked egg to flow underneath. Continue cooking and folding until the eggs are mostly set but still slightly moist. Stir in the cooked turkey bacon.

Divide the scramble among 4 plates. Serve immediately, garnished with optional hot sauce or sliced avocado if desired.
