Preheat your oven to 425°F. Line a large baking pan with parchment paper for easier cleanup, if desired.

Place the chicken drumsticks directly on the prepared baking pan. Drizzle the drumsticks with neutral oil, then season with salt, ground black pepper, and mirin. Use your hands (wearing gloves is recommended) to thoroughly coat each drumstick with the seasonings.

Once the oven is preheated, place the baking pan with the seasoned chicken drumsticks into the oven. Bake for 40 minutes. If you are baking vegetables concurrently, place them on a lower rack.

While the chicken is baking, prepare the Gochujang sauce. In a medium bowl, combine the honey, Gochujang, soy sauce, minced garlic, Gochugaru, and water. Whisk until all ingredients are well combined and the sauce is smooth.

When the chicken has about 5 minutes left to bake, transfer the prepared sauce to a large pan. Place the pan over medium heat and bring the sauce to a gentle simmer. Cook, stirring occasionally, for 3 to 5 minutes, or until the sauce has thickened slightly.

Once the drumsticks are done baking, carefully remove them from the oven. Add the hot drumsticks directly to the pan with the simmering sauce. Gently flip the drumsticks using tongs, ensuring each piece is thoroughly coated in the rich Gochujang sauce.

Serve the Baked Gochujang Chicken Drumsticks immediately. Garnish with sesame seeds, if desired. If there is any leftover sauce in the pan, you can spoon a little extra over each drumstick before serving. For younger children, you may serve some drumsticks unsauced or wrap the ends in aluminum foil for easier handling.
