First, prepare the fresh ripe mangoes by cutting them in half, scoring the flesh, and then pushing the skin to create mango cubes. Measure out 2 cups of the mango chunks.
Add the 2 cups of mango chunks into a blender.

Next, add the 1 1/3 cups of full-fat plain yogurt to the blender.

Pour in the 2/3 cup of whole milk.

Add 1 teaspoon of granulated sugar and a pinch of kosher salt.

If desired, add 1/4 teaspoon of ground cardamom.

Secure the lid on the blender and blend all the ingredients until the mixture is completely smooth and creamy.

Taste the mango lassi. If it's not sweet enough, add more sugar to taste. If it's too thick, add a splash more milk to achieve the desired consistency, then blend again briefly.

Pour the prepared mango lassi into serving glasses.

Sprinkle finely chopped pistachios on top of each serving for garnish.

Serve cold and enjoy.
