Preheat your oven to 180°C (350°F). Grease a 20cm round cake pan and line the bottom with parchment paper.

In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk these dry ingredients together thoroughly to ensure even distribution of the leavening agent.

In a separate bowl, crack the large eggs. Add the vegetable oil and fresh orange juice. Using a microplane or fine grater, add the zest of 2 oranges to the wet ingredients. Whisk these wet ingredients until they are well combined.

Gradually pour the wet ingredients into the bowl with the dry ingredients. Mix with a whisk or an electric mixer on low speed until just combined. Be careful not to overmix, as this can lead to a tough cake. Mix until no streaks of flour remain.

Pour the cake batter evenly into the prepared pan.

Bake the cake for approximately 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.

Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes.

After 10 minutes, invert the cake onto a wire rack, remove the pan and parchment paper, and allow it to cool completely before glazing. This will take about 15 minutes.

To prepare the orange glaze (optional): In a small bowl, combine the powdered sugar with 2-3 tablespoons of fresh orange juice. Whisk until smooth and lump-free. The consistency should be pourable but thick enough to coat the back of a spoon. Add more juice if too thick, or more powdered sugar if too thin.

Once the cake is completely cool, drizzle the orange glaze evenly over the top, allowing it to drip down the sides. Let the glaze set for about 10-15 minutes before serving.
