Press the 2 blocks of firm tofu to remove excess water. This can be done by wrapping the tofu in paper towels or a clean cloth and placing a heavy object on top for at least 15 minutes. Once pressed, crumble the tofu into a bowl.

In a separate mixing bowl, combine all the sauce ingredients: soy sauce, minced garlic, minced ginger, honey, sesame oil, water, corn starch, and the optional diced jalapeno. Whisk these ingredients together thoroughly until the corn starch is fully dissolved and the sauce is well combined.

Heat a large 12-inch fry pan over medium-high heat. Add the optional 1/2 tablespoon of chili oil to the pan. Once hot, add the crumbled tofu to the pan and spread it out evenly. Fry the tofu, stirring occasionally, until it turns golden brown and slightly crispy, about 8-10 minutes.

Pour the prepared sauce over the golden brown tofu in the pan. Stir continuously, ensuring all the tofu is coated, until the sauce thickens and reduces to a glossy coating, about 3-5 minutes.

Remove the pan from the heat. Serve the spicy honey garlic minced tofu immediately over rice or your preferred grain. Garnish generously with sesame seeds and chopped green onions as desired.
