Prepare the shrimp by peeling, deveining, and dicing 10-12 medium shrimp into small pieces.

Prepare the vegetables: dice 1/4 cup of yellow onion and 1/4 cup of bell pepper (any color). Chop 1 tablespoon of green onion.

In a mixing bowl, combine the diced shrimp, diced yellow onion, diced bell pepper, 1/2 cup of bean sprouts, and the chopped green onion.

To the same bowl, crack in 2 large eggs. Add 1 teaspoon of soy sauce, 1 teaspoon of oyster sauce, 1/2 teaspoon of sesame oil, 1 tablespoon of cornstarch, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper.

Thoroughly mix all the ingredients in the bowl until well combined, forming the Egg Foo Young patty mixture.

Heat a pan over medium heat and add 2 tablespoons of oil. Once the oil is hot, pour the entire mixture into the pan. Spread it out to form a single patty shape.

Cook the patty until it is golden brown on the bottom (approximately 3-5 minutes). Carefully flip it over to cook the other side until it is also golden brown and cooked through (another 3-5 minutes). Remove the cooked patty from the pan and set aside.

In a separate small saucepan, combine 1/4 cup of soy sauce, 1/4 cup of oyster sauce, 1/2 tablespoon of cornstarch, and 1/2 cup of water for the gravy.

Heat the gravy mixture over medium heat, stirring continuously, until the gravy thickens to your desired consistency (approximately 2-3 minutes).

Place the cooked Shrimp Egg Foo Young patty on a plate and generously pour the prepared gravy over it. Serve immediately.
