Preheat your oven to 180 degrees Celsius.

Squeeze the peppercorn beef sausages out of their casings directly into a hot pan. Break up the sausage meat with a spatula and brown it off over medium-high heat until cooked through, about 5-7 minutes.

Add the diced brown onion and minced garlic to the pan with the browned sausage. Cook for 3-5 minutes, stirring occasionally, until the onion is softened and fragrant.

Pour in the tomato passata and light thickened cream. Season the mixture with salt and pepper to taste. Give it a good mix to combine all ingredients.

Add the gnocchi, chopped broccolini, and baby spinach to the pan. Stir all the ingredients together until well combined and the spinach has wilted slightly.

Top the mixture evenly with the grated light mozzarella.

Transfer the pan to the preheated oven and bake for 15 minutes, or until the cheese is melted and bubbly and the gnocchi is tender.

Serve hot and enjoy your Tuscan Sausage Gnocchi.
