Preheat your oven to 375°F (190°C). Lightly grease four 6-ounce ramekins or a 9-inch pie dish with butter.

Divide the diced ham evenly among the prepared ramekins or sprinkle over the bottom of the pie dish. Sprinkle half of the shredded cheddar cheese over the ham.

Carefully crack two eggs into each ramekin, or crack all eight eggs evenly over the ham and cheese in the pie dish, ensuring the yolks remain intact.

In a small bowl, whisk together the heavy cream, melted butter, minced chives, salt, and black pepper until well combined.

Pour the cream mixture evenly over the eggs in each ramekin or over the eggs in the pie dish. Sprinkle the remaining shredded cheddar cheese over the top.

Place the ramekins (or pie dish) on a baking sheet. Bake for 15-20 minutes, or until the egg whites are set and the yolks are still slightly runny (for firmer yolks, bake a few minutes longer). The cheese should be melted and bubbly.

Carefully remove from the oven. Garnish with additional fresh chives, if desired, and serve immediately with toast or crusty bread.
