Slice the 500g of pork belly into bite-sized pieces.

In a large bowl, combine the soy sauce, oyster sauce, dark soy sauce, rice wine, sugar, white pepper, garlic powder, five spice powder, and sesame oil. Mix thoroughly until well combined.

Add the sliced pork belly and potatoes to the bowl with the marinade. Mix well to ensure all pieces are evenly coated.

Sprinkle the salt and baking soda over the marinated pork and potatoes. Add the white vinegar. Mix again thoroughly to distribute the new seasonings.

Cover the bowl and set aside to marinate for 30 minutes. This allows the flavors to meld and the baking soda to tenderize the pork.

Arrange the marinated pork and potatoes in a single layer in an air fryer basket. Avoid overcrowding to ensure even cooking and crispiness. Air fry at 180°C for 20 minutes.

After 20 minutes, carefully open the air fryer and flip the pork and potatoes to ensure even crisping. Increase the air fryer temperature to 200°C and air fry for another 10 minutes, or until the pork belly is crispy and the potatoes are tender and golden brown.

Once cooked to your desired crispiness, remove from the air fryer and serve immediately.
