Place the Greek yogurt into a large mixing bowl. For this recipe, we will use approximately 180 grams of Greek yogurt to yield two servings, which can then be divided into four smaller portions.

Add the entire 1 ounce (28g) package of Jell-O vanilla instant reduced calorie pudding & pie filling (sugar-free pudding mix) to the Greek yogurt in the bowl.

Using an electric hand mixer, mix the Greek yogurt and pudding mix together on medium speed until the mixture becomes fluffy, creamy, and well combined. This should take about 2-3 minutes.

In a food processor, process the protein cookie butter granola until it is crushed into small, fine pieces. Alternatively, place the granola in a zip-top bag and crush with a rolling pin.

In a glass dish or individual serving cups, spread an even layer of the fluffy yogurt mixture as the base.
