In a medium mixing bowl, whisk together the powdered sugar, milk, and vanilla extract until the mixture is smooth and free of lumps. The glaze should be thick enough to coat a spoon but still pourable. If it's too thick, add milk 1/2 teaspoon at a time until the desired consistency is reached. If too thin, add powdered sugar 1 tablespoon at a time.

Divide the prepared glaze evenly into 4 (or more, depending on how many colors you wish to use) small bowls.

Add a small amount of gel food coloring to each small bowl, using a different color for each. Stir well until the color is fully incorporated and vibrant. Add more food coloring if a deeper shade is desired.

Dip the top of each donut into one of the colored glazes, allowing any excess glaze to drip back into the bowl. Place the glazed donut on a wire rack set over a baking sheet or a piece of parchment paper to catch drips.

Immediately sprinkle rainbow sprinkles generously over the wet glaze before it has a chance to set. Allow the glaze to set for about 10 to 15 minutes at room temperature before serving.
