Lay out 8 slices of sturdy white bread on a clean surface. For each sandwich, you will use two slices of bread.

For each sandwich, place 2 slices of sharp cheddar cheese on one slice of bread, then layer with 2 slices of provolone cheese. Top with the second slice of bread.

Evenly spread about 1 tablespoon of mayonnaise on the outside of each assembled sandwich. Ensure both sides are coated from edge to edge. This will create a golden, crispy crust.

Heat a large non-stick skillet or griddle over medium-low heat. If desired, add 1/2 tablespoon of butter to the pan for extra richness, allowing it to melt and coat the surface.

Carefully place 2 sandwiches into the hot skillet, mayonnaise-side down. Cook for 4-6 minutes, or until the bread is a deep golden brown and crispy. If using butter, ensure it doesn't burn.

Flip the sandwiches and cook on the second side for another 4-6 minutes, or until that side is also golden brown and the cheese is completely melted and gooey. You can gently press down on the sandwiches with a spatula to encourage even browning and melting.

Remove the grilled cheese sandwiches from the skillet and let them rest for 1 minute before slicing in half and serving immediately. Repeat with remaining sandwiches.
