Place 500 grams of chicken pieces into a bowl. Use a knife to make cuts on each chicken piece to allow the marinade to penetrate.

To the chicken, add 2 tablespoons salt, 1 tablespoon black pepper, 1 tablespoon garlic powder, 1/2 tablespoon ginger powder, 1 tablespoon paprika, and 1/2 tablespoon red chilli powder. Pour in 1/2 cup water.

Mix all the ingredients thoroughly by hand, ensuring each chicken piece is well coated. Cover the bowl with plastic wrap and refrigerate for 30 minutes to marinate.

In a separate bowl, combine 1 cup plain flour, 1/2 cup corn starch, 1 teaspoon baking powder, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Whisk the dry ingredients together until well combined.

Take one piece of marinated chicken and dredge it completely in the dry coating mixture, ensuring it is fully covered. Dip the coated chicken piece into water, then immediately dredge it again in the dry mixture. Press firmly to ensure a thick and even coating. Repeat this process for all remaining chicken pieces.

Heat cooking oil in a deep pot over medium-high heat until it reaches approximately 350°F (175°C).

Once the oil is hot, carefully place the coated chicken pieces into the pot, ensuring not to overcrowd the pot. Fry until the chicken is golden brown and crispy on all sides, and cooked through (internal temperature should reach 165°F or 74°C). This typically takes about 6-8 minutes per batch, depending on the size of the chicken pieces.

Remove the fried chicken from the oil and place it on a wire rack to drain any excess oil. Serve hot.
