Dice the onion into small, 1/2-inch pieces and set aside.

Cut the bacon into thin strips or cubes to your desired thickness and set aside.

Prepare the cabbage: Cut into large, square-like pieces by slicing each side close to the core on all four sides, as well as the bottom. Then, cut the slices into 3-inch pieces and set aside.

Prepare the collard greens: Take one leaf at a time, lay it upside-down and spread it flat on a cutting board. Cut along each side of the tough spine in the center, removing it completely. Discard the spines. Place the destemmed greens into several stacks and roll up each stack lengthwise. Slice each roll into 1-inch pieces, cutting the collard greens into ribbons.

Wash the prepared collard greens and cabbage pieces thoroughly in water. Drain as much liquid as possible and set aside.

In a large pot or Dutch oven, cook the bacon over medium heat until it is brown and crispy, about 5 minutes.

Add the diced onion to the pot with the bacon and continue to cook for an additional 5 minutes, until softened.

Remove the cooked bacon and onions from the pot, leaving the rendered bacon fat behind. Set the bacon and onion mixture aside.

Add the prepared collard greens to the pot with the bacon fat. Toss them well and allow them to wilt for about 5 minutes.

Add the prepared cabbage, the reserved bacon and onion mixture, white sugar, Cajun seasoning, and chicken broth to the pot. Stir until all ingredients are fully incorporated.

Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 20 to 30 minutes, or until the cabbage is tender.

Taste and adjust seasoning if necessary. Serve hot and enjoy!
