Pour 300 ml of lukewarm water into a large bowl.

Add 1 teaspoon of caster sugar and a 7 gram sachet of dried yeast to the water. Mix the ingredients together gently and leave for 10 minutes to activate the yeast.

Add 500 grams of strong white bread flour, 1 teaspoon of salt, and 1 tablespoon of olive oil to the bowl with the water mixture.

Mix the ingredients until they form a shaggy dough. This can be done initially with a spoon and then by hand kneading in the bowl until it comes together.

Transfer the dough to a lightly floured surface and knead for 5-10 minutes until smooth and elastic. The dough should spring back when gently poked.

Lightly oil a clean bowl. Place the kneaded dough in the oiled bowl, turning once to coat. Cover it tightly with clingfilm and leave it to rise in a warm place for 1-2 hours, or until it has doubled in size.

Once risen, gently punch down the dough to release the air. Then, transfer it back to a lightly floured surface and divide it into 2 equal balls.

Take one dough ball and, using a rolling pin or your hands, roll or stretch it out to your desired thickness and shape for your pizza base. Repeat with the second dough ball. Add your favourite toppings to each pizza base.

Preheat your oven to 200°C (400°F). Bake the prepared pizzas in the preheated oven for 10-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
