Melt 2 tablespoons of butter in a large skillet over medium heat. Add the sliced red onions and chopped garlic. Season generously with 1 teaspoon of Padstal Braai Spice and 1/2 teaspoon of freshly ground black pepper. Sauté, stirring occasionally with a wooden spatula, until the onions are soft, browned, and caramelized, about 15-20 minutes. Remove the caramelized onions from the pan and set aside.

In the same skillet, melt 3 tablespoons of butter over medium heat. Once melted and bubbling, add 3 tablespoons of all-purpose flour. Immediately whisk continuously to create a roux. Cook the roux for 1-2 minutes until it turns a light brown color.

While continuously whisking, gradually pour 2 cups of Clover Fresh Cream into the roux. Continue whisking until the sauce is smooth and begins to thicken. Add 1 1/2 cups of shredded mature cheddar cheese to the sauce. Whisk until the cheese is completely melted and incorporated, creating a thick, creamy cheese sauce. Keep the sauce warm over very low heat.

Prepare a wood fire (braai) with hot coals. Place the four Padstal Deli Beef Groot Seun Patties on a grill grate over the hot coals. Grill the patties for 4-6 minutes per side, flipping once, until they are cooked to your desired doneness and have visible grill marks.

Slice the two cheese-topped burger buns in half horizontally. Spread a layer of white condiment (mayonnaise or aioli) on the bottom half of each bun. Place a generous spoonful of the prepared caramelized onions on top of the condiment on each bottom bun.

For each double burger: Place one grilled beef patty on the onions. Sprinkle 1/4 cup of shredded mature cheddar cheese over the first patty. Place a second grilled beef patty on top of the cheese. Sprinkle another 1/4 cup of shredded mature cheddar cheese over the second patty. Spread white condiment on the top half of the bun. Season the top bun with a pinch of Padstal Braai Spice and freshly ground black pepper. Place the seasoned top bun onto the assembled patties to complete each double burger. Using a knife, cut each assembled double burger in half.

Pour a substantial amount of the warm cheese sauce into a clean skillet. Carefully place the halved, assembled double burgers into the bubbling cheese sauce in the skillet. Serve the Mature Cheddar Double Cheese Burger Skillet hot, directly from the pan.
