Divide the minced chicken into 10 equal portions. For each mini tortilla, place approximately 2 to 3 tablespoons of ground chicken in the center, pressing down gently with your palm or a spatula to create an even, thin layer that covers most of the tortilla.

Season the chicken side of each prepared tortilla generously with salt and black pepper.

Heat a large skillet or griddle over high heat. Add a small amount of oil to coat the bottom of the pan.

Carefully place the tortillas, chicken-side down, into the hot skillet. Cook over medium-low heat for 2 to 3 minutes, or until the chicken is fully cooked through and browned. The chicken should release easily from the pan when cooked.

Flip the tacos and continue to cook on the tortilla side for another 1 to 2 minutes, or until the tortilla is crispy and golden brown. Remove from the skillet and set aside on a plate.

While the tacos are cooking, prepare the Caesar dressing. In a medium bowl, whisk together the mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, minced garlic, salt, and black pepper until well combined.

Slowly drizzle in the olive oil into the dressing mixture while continuously whisking. Continue to whisk until the dressing is smooth and emulsified.

To assemble the tacos, top each cooked chicken smash taco with a generous amount of diced romaine lettuce, shredded or shaved Parmesan cheese, and croutons.

Drizzle the freshly made Caesar dressing over the toppings of each taco.
