Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a medium bowl, combine the diced sweet potatoes with 1 tablespoon of olive oil, smoked paprika, garlic powder, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Toss until the sweet potatoes are evenly coated. Spread them in a single layer on the prepared baking sheet.

Roast the sweet potatoes for 20-25 minutes, flipping halfway through, until tender and slightly caramelized.

While the sweet potatoes are roasting, prepare the quinoa. Rinse the quinoa thoroughly under cold water using a fine-mesh sieve. In a small saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed and the quinoa is fluffy. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.

While the quinoa cooks, prepare the sautéed spinach and chickpeas. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.

Add the rinsed and drained chickpeas to the skillet and cook for 3-5 minutes, stirring occasionally, until slightly warmed through. Add the chopped spinach in batches, if necessary, and cook until wilted, about 2-3 minutes. Stir in 1 tablespoon of lemon juice, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.

Prepare the tahini dressing. In a small bowl, whisk together the tahini, 2 tablespoons lemon juice, 2 tablespoons water, maple syrup, garlic powder, and 1/8 teaspoon salt until smooth. Add more water, 1 teaspoon at a time, if needed, to reach your desired consistency.

To assemble the power bowls, divide the cooked quinoa among 4 serving bowls. Top each with roasted sweet potatoes, sautéed spinach and chickpeas. Drizzle generously with the tahini dressing. Garnish with toasted pumpkin seeds and fresh parsley, if desired.
