Finely dice the onion. In a large pan, melt the butter over medium heat. Add the diced onion and sauté until softened, about 5-7 minutes.

Add the ground beef to the pan with the softened onions. Cook, breaking it apart with a spoon, until the beef is browned, about 8-10 minutes.

Season the browned ground beef with 1 teaspoon of salt and 1 teaspoon of black pepper. Stir well to combine.

Pour about 1/2 cup of beef stock into the pan. Continue to cook until the meat is done and the liquid has reduced slightly, leaving the mixture slightly juicy, about 5-7 minutes. Stir in the chopped parsley. Remove from heat and set aside.

In a shallow bowl, whisk together the 2 eggs, 1 cup milk, and 2 tablespoons olive oil until well combined. This will be your dipping mixture for the rice papers.

Preheat your oven to 200°C (390°F).

Dip 3 rice papers, one at a time, into the egg mixture, ensuring they are fully coated and softened. Arrange these 3 dipped rice papers at the bottom of a baking dish, overlapping slightly, to form the base layer.

Spread the cooked ground beef mixture evenly over the rice paper base.

Place cheddar cheese, as much as you like, on top of the ground beef mixture.

Dip another 3 rice papers into the egg mixture and carefully place them on top of the cheddar cheese, forming a second rice paper layer.

Add a layer of caramelized or raw onions on top of the second rice paper layer.

Dip the final 3 rice papers into the egg mixture and place them on top of the onions, creating the top layer of the 'cheeseburger'.

Brush the surface of the top rice paper layer with the 1 egg yolk. Sprinkle generously with white sesame seeds and black sesame seeds.

Using a knife, gently score the top layer into desired serving portions (e.g., squares or rectangles) before baking. This will make it easier to cut after baking.

Bake in the preheated oven at 200°C (390°F) for about 30 minutes, or until the top is golden brown and crispy.

Remove from the oven. Serve hot with fresh lettuce, and top with ketchup and mayonnaise as desired.
