Dice the 1/2 yellow pepper, 1/2 red pepper, and 1 onion. Set aside.

In a large pan or pot, brown the 500g of 5% mince over medium-high heat. Break up the mince as it cooks until it is no longer pink.

Once the mince is browned, add the diced yellow pepper, red pepper, and onion to the pan. Cook until the vegetables have softened, about 5-7 minutes.

Stir in the 1 packet of fajita seasoning and a pinch of salt to the mince and vegetable mixture. Cook for 1-2 minutes until fragrant.

Pour in the 500g of tomato passata and 350ml of beef stock. Stir well to combine all ingredients.

Stir in the 200g of orzo pasta. Bring the mixture to a simmer.

Reduce the heat to low, cover the pan, and let it simmer for approximately 10-15 minutes, or until the orzo is cooked through and most of the liquid has been absorbed. Stir occasionally to prevent sticking.

Once the orzo is cooked, stir in the 150g of mozzarella cheese until it is melted and fully incorporated into the mixture, creating a cheesy consistency.

The Cheesy Mexican Beef Orzo is now ready to serve.
