Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Add 500 grams of ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat from the pan.

Roll the tortilla tightly to form a taquito. You can secure it with a toothpick if needed.

In a food processor or blender, combine 2 ripe avocados, 1/4 cup of sour cream, 1/4 cup of fresh cilantro, 1 deseeded jalapeรฑo (if using), 1 tablespoon of fresh lime juice, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper.

Blend until the mixture is smooth. Gradually add 2-4 tablespoons of water until the desired creamy consistency is reached.

Serve the crispy cheesy beef taquitos hot with the creamy avocado sauce for dipping.
