Cut the 1 kg of pork belly into large, manageable pieces.

Add the whole peeled garlic, sliced ginger, dark soy sauce, light soy sauce, rock sugar, star anise, and cinnamon stick to the pot with the pork belly.
Pour 500 ml of water into the pot, ensuring all ingredients are submerged as much as possible.

Cover the pot with a lid and place it over high heat to bring the mixture to a boil.

Once the mixture is boiling, reduce the heat to low, ensuring a gentle simmer. Keep the pot covered.

Continue to simmer, covered, for 1 1/2 to 2 hours, or until the pork is fall-apart tender and has absorbed the rich soy sauce flavors. Stir occasionally to prevent sticking and ensure even cooking.
