Add the cut chicken tenders, cream of chicken soup, chicken broth, diced yellow onion, diced celery, sliced carrots, minced garlic, poultry seasoning, dried thyme, salt, and black pepper to a 6-quart or larger crock pot. Stir everything together until well combined.

Cover the crock pot and cook on HIGH for 3 1/2 hours or on LOW for 6 to 7 hours, or until the chicken is cooked through and tender.

About 30 minutes before the end of the cooking time, prepare the dumpling dough. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.

Pour the milk and melted unsalted butter into the flour mixture. Stir with a fork until just combined; the dough will be sticky. Do not overmix.

Remove the lid from the crock pot. Drop spoonfuls of the dumpling dough directly onto the hot chicken mixture. Leave small spaces between the dumplings as they will expand.

Replace the lid and continue to cook on HIGH for another 30 minutes, or until the dumplings are cooked through and fluffy. They should be firm to the touch and no longer doughy in the center.

Stir gently to combine the dumplings with the chicken and sauce. Garnish with fresh chopped parsley, if desired, and serve hot.
