Place the cut chicken breast pieces into a mixing bowl.

Add the salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper to the chicken. Mix all the spices thoroughly with the chicken pieces until they are well coated.

Pour the buttermilk over the seasoned chicken. Mix again to ensure every piece of chicken is fully coated in the buttermilk and seasonings. Cover the bowl and refrigerate to marinate for at least 30 minutes.

Heat oil in a deep pot to 180°C. Carefully place the coated chicken pieces into the hot oil, frying them in batches to avoid overcrowding the pot. Fry until the chicken is golden brown and crispy on the outside, about 3-5 minutes per batch.

Once cooked, remove the crispy chicken bites from the oil and serve immediately.
