After resting, thinly slice the carne asada against the grain, then chop it into bite-sized pieces suitable for tacos.
Assemble your tacos: Place a generous amount of chopped carne asada into each warm tortilla. Top with diced red onion, fresh cilantro, diced avocado, a spoonful of salsa verde, and crumbled cotija cheese if using. Serve immediately with fresh lime wedges on the side for squeezing.
