In a small bowl, combine the light mayonnaise and Miracle Whip (if using) until smooth. Set the McChicken sauce aside.

In a medium bowl, mix the ground chicken with the garlic powder, black pepper, and salt until well combined.

Take one flour tortilla and press a thin, even layer of the seasoned ground chicken onto one side of the tortilla, covering the surface completely. Repeat this process for all remaining tortillas.

Sprinkle breadcrumbs evenly over the chicken layer on each prepared tortilla. This will add a desirable crunch.

Heat a large skillet over medium-high heat. Add a small amount of avocado oil to coat the bottom of the pan.

Carefully place a tortilla, chicken-side down, into the hot skillet. Cook for 3 to 4 minutes, or until the chicken is golden brown and fully cooked through.

Flip the taco and cook on the tortilla side for another 2 to 3 minutes, or until the tortilla is crispy. Remove from the pan and place on a clean surface. Repeat steps 6 and 7 for all remaining tortillas.

Spread a generous amount of the prepared McChicken sauce over the crispy chicken layer of each cooked taco.

Top each taco with shredded iceberg lettuce.

Fold each taco in half and serve immediately. Enjoy your high-protein McChicken smash tacos!
