Prepare the Sauce: In a small bowl, combine the 20g of PB2 powder, 15ml of soy sauce, 1 teaspoon of sweetener, a splash of rice wine vinegar, 1 teaspoon of garlic powder, 1 teaspoon of chilli flakes (such as gochugaru), and a pinch of MSG. Add enough water to the bowl and mix all the sauce ingredients together until a smooth, loose paste is formed.

Prepare the Noodles: Open the pack of tofu noodles. Drain the noodles using a colander, then rinse them thoroughly with cold water.

Cook the Beef: Place a pan on the stove over medium-high heat and add a small amount of oil. If using, add diced red onions to the pan and sauté briefly. Add the 200g of extra lean beef to the pan. Brown the beef, breaking it up as it cooks. Add 1 teaspoon of soy sauce to the beef while it is browning. Continue cooking until the beef is fully browned and cooked through.

Assemble the Dish: Transfer the drained and rinsed tofu noodles into a metal mixing bowl. Pour the prepared peanut butter sauce over the noodles. Mix the noodles and peanut sauce thoroughly until the noodles are fully coated.

Serve and Garnish: Transfer the sauced noodles into individual serving bowls. Serve the browned extra lean beef on top of the noodles. Garnish generously with sesame seeds and fresh coriander/cilantro. The dish can be eaten cold as is, or heated in a microwave for 1 to 2 minutes just before serving.
